COCONUTTY PROTEIN SLICE

Super simple, quick, easy, tasty, inexpensive protein-packed vegan treat anyone!?

I thought as much.

For those tracking macros, this recipe is 125kcal a portion with % energy split: 31C/36F/32P.

Recipe is 8 servings.

I used the below ingredients but as ever you can trade out optional ingredients for spices & extras of your choice - top with seeds instead of desiccated coconut, for example.

Ingredients:

• 75g rolled oats

• 75g vegan protein powder (I used chocolate)

• 20g flaxseeds

• Dairy free milk

• 20g Desiccated coconut (optional)

• 15g Peanut butter (optional)

• Ground cinnamon (optional)

Method:

1. In a large bowl, mix together oats and protein powder & half of the inclusions of choice

2. Gradually stir in milk until a batter is formed - I used about 200ml of soya milk but go easy, you can always add more but can't take it away!

3. Press batter into a grease proof paper lined cake or loaf tin

4. Sprinkle with topping of choice (in my case, the rest of the desiccated coconut). if using seeds or any other chunkier inclusions, press them in slightly so they stick

5. Bake at 180c for ~15 minutes. Leave to cool before slicing into 8.
