PEARL BARLEY VEGETABLE BROTH

It's cold & dark out, what could be more comforting than a big bowl of hearty soup?

For those tracking macros, this recipe is 226kcal based on 4 (generous) portions or 5 (more modest) portions at 181kcal with % energy split: 74C/19F/9P.
Ingredients:
• 1 large onion
• 1 tbsp olive oil
• 2 baking potatoes
• 3 carrots
• 75g pearl barley & pea mix for stew
• 2 veg stock cubes
• Dried oregano
• Dried rosemary
• Salt & pepper, to taste
Method:
1. Roughly (but carefully!) chop onion & fry in olive oil in a large saucepan for a few minutes to soften.
2. Add cubed potato, carrot & pearl barley mix. I like my vegetables quite chunky but these can be made accordingly to personal preference, just note this may affect cooking time.
3. Sprinkle stock over the veg & grains and add freshly boiled water until veg is covered.
4. Bring to the boil for 10 minutes, mix, then simmer for 20-30 minutes until grains have soaked up some of the water and the vegetables have softened.
5. Season with herbs, salt & pepper.
